Like your regular home oven, you need to preheat it before placing a pizza inside it. Several factors affect heat up times, like the dryness of the wood. I recommend using seasoned or kiln-dried wood for wood burning pizza ovens. The Ooni Karu is one of the more portable pizza ovens on this list, too. Under ideal conditions, we found that the Etna Fermo’s pizza stone could reach its operating temperature of 500ºC in just 18 minutes, although it struggled a little to reach this temperature on cooler days. Even below 500ºC, it was able to cook a classic, thin-crust homemade pizza to perfection in just 60 seconds. What’s more, we found it matched the authentic flavour of wood-powered ovens. Once your fire is lit you have to get it up to temperature and then keep it there for the duration of cooking. To do this, the instructions recommend refuelling when the 'pellets have burnt to embers, but before all visible flames have disappeared'. Doing this means you don't overload the grate which causes lots of smoke, but also means you have a few flames to help the next batch of pellets catch. Once the pizza oven reaches the desired temperature, it is a good idea to add a small cup of pellets, and let these burn a bit before putting food in. A brucialegna is quite simply the Italian word for a grate or fire basket. Its direct translation is ‘wood burner’. A brucialegna is quite popularly used by many Italian wood oven chefs as it allows better air circulation for the burning embers. Another added benefit is that as the logs burn lumpwood charcoal is formed underneath which can then be removed with the ‘tirabrace’ or ember remover. Anyone who has ever experienced real lumpwood charcoal barbecued food would admit it imparts a flavour somehow missing from the commercial-grade charcoal. The rest of the oven can be cleaned with a damp cloth as needed and any soot and smoke wiped away with dry kitchen roll. Note that the stainless steel parts of the oven do change colour after use – a reaction with the heat that creates an interesting patina that I think adds to the industrial look of the pizza oven. Is the Woody Pizza Oven worth the money?Despite its huge capacity, the Ooni is surprisingly compact at 50 x ​​81.5 x 83.7cm (including chimney), making it suitable for smaller gardens too. There’s a digital thermometer at the front, as well as a hinged door at the front and chimney on top, which allows you to control the airflow and temperature of the oven. In testing, we found the Ooni produced excellent results with both wood and gas, though the wood offered a crispier, smokier and more authentic pizza flavour overall. Adding and removing our pizza was easy, due to the Karu’s wide opening, and the reheat time was super speedy too – sometimes as little as 60 seconds. Our ‘Little Italy’.
