This single varietal Spanish wine presents wonderfully expressive notes of acacia, cherry blossom, apple and quince in the glass. We apologise if we take a little longer in busier periods and we thank you in advance for your patience and understanding.

After fermentation, classification and fortification the wine enters the Fino Solera, where it ages under a layer of 'flor', before being blended with pale, sweet grape musts and entering the Croft Solera. A first gentle pressing is applied to the Palomino grapes to obtain the 'mosto yema', the first and most delicate must.

A new audience emerged, an audience who continued to demand a sweet wine, but with the appearance of a dry fortified wine. Once the grapes are harvested, sherry production starts life like any white wine – with the grapes pressed and fermented.
