Finally, they are carefully blended together to create a perfect representation of the unique Klein Constantia terroir. Klein Constantia is custodian to some of the most historic vineyards in South Africa and, indeed, the world. This full flavoured Cabernet Sauvignon is packed with juicy blackcurrant fruit with a hint of spice.

All wines are produced in environmentally responsible and biodynamic ways, and Klein Constantia is a Biodiversity in Wine Initiative Champion. I am not generally a big fan of South African Sauvignon, but actually was pleasantly surprised by this. There’s Marlborough’s tropical-fruit styles to the Loire’s elegant and grassy Sancerre – with plenty in between.

With bold fruit and a enjoyable minerality to it, we think it'll pair deliciously with a good seafood dish. Simple winemaking techniques are used to extract the best from grapes grown in expertly nurtured vineyards in the aim of making consistently excellent wines. Still youthful, intense and showing some tannic structure, it’s a superb, bone-dry expression of Constantia with notes of grapefruit pith, elderflower and wet stones. It consists of a blend of various parcels from the estate, each kept separate throughout the winemaking process. To calculate the overall star rating and percentage breakdown by star, we don’t use a simple average.

Loire Valley guru Pascal Jolivet inspired the talented Matt Day to make this wild-fermented, left-field Sauvignon Blanc from two complementary parcels on one of the oldest estates in South Africa’s Constantia Valley. This fusion of philosophies is reflected in the flower on the label that is a hybrid of the South African Protea and French Iris. One of the worlds most beautiful vineyard locations, Klein Constantia is just 20 kilometres from the centre of Cape Town.

Vinification is followed by maturation on the fine lees for several months before the wine is finally bottled.
